On a health note, if you're a regular reader, you may remember that earlier this year I was diagnosed with prediabetes. I was shocked by this as I always thought prediabetes was caused by obesity and I'm not overweight, but my doctor told me I was in the high risk category because of my age and my family history of diabetes. My doctor wanted to put me on
medication but I refused. I was able to reverse it in 8 months and I now test in the normal range!
To do this, I had to really overhaul my diet. I cut out everything white. No white flour, no white sugar, no potatoes, etc. I had to give up my favorite foods: I'm Italian and I love my pasta and pizza! Tacos too! I have found delicious substitutes like a brown rice and quinoa pasta from Trader Joe's that's pretty tasty. I occasionally
will have a small slice of pizza but eat it with salad and veggies to slow the absorption of the white flour. I've always had a sweet tooth but I found delicious stevia sweetened candies and I learned to make yummy stevia and banana sweetened protein energy balls that I have with my coffee in the morning. These days my diet consists of whole grains, legumes, veggies, fruits, plain Greek yogurt, lean meats and fish. I also do some form of exercise every day.
I think the prediabetes diagnosis was a good thing in that it prompted me to make changes that I'm sure will add many more years to my life.
